This in-house, festive recipe makes delicious gingerbread biscuits - perfect for a bit of last minute baking! It's handy to have in the pantry for a rainy day, or to create a bit of festive fun with the kids, or to give as a fun gift. Simply add the wet ingredients to form a dough, and shape using the gingerbread man cookie cutter, before popping into the oven, and before you know it you'll have the delightful aroma of warm gingerbread wafting through your home!

Ingredients

Almond Meal Blanched, Coconut Flour*, Ground Ginger, Baking Powder [Disodium Diphosphate: E450, Organic Corn Starch*, Sodium Bicarbonate], Ground Cinnamon, Himalayan Salt, Ground Nutmeg. *: Certified Organic

How to Use

You will also need:
50g melted butter
1 lightly beaten egg
1/2 cup maple syrup
1tsp vanilla essence
Optional decorations: currants, goji berries, chocolate buttons or icing

1. Preheat oven to 180°c.
2. Place contents of jar into a food processor and briefly pulse.
3. Add butter, maple syrup, vanilla, and egg and pulse until dough forms a ball.
4. Wrap in a beeswax wrap and place in the fridge for at least 2 hours.
5. Roll dough between 2 sheets of baking paper until 1cm thick.
6. Cut into shapes and place on a lined baking tray (gently press into place any decorations before baking).
7. Bake for 15-20 minutes until golden brown.
8. Cool on a wire rack, once cool, shapes can be iced if desired.

Makes approx. 12-14 biscuits.
