Dill seeds have a lovely fresh, citrus-like flavour with grassy undertones. The subtle sweetness works particularly well with garlic and mint, and can be used as a substitute for parsley. Dill seeds can be used whole or crushed, toasted, fried or cooked in broths. Dill works well in breads, soups, or vegetable dishes. Add them at the start for a fuller, mellower flavour, or shortly before serving to retain the seeds’ pungency.
