Dark Agave syrup (or nectar) is a sweetener often used to substitute sugar and honey in beverages, savoury dishes, desserts, baked goods and raw food recipes. This Raw Agave syrup is extracted from the Wild Maguey cactus species, sustainably harvested in the Ixmiquilpan region of central Mexico by a Co-op of indigenous Hnahnu people. It is processed using a plant-based vegan certified organic enzyme that works in much the same way as the enzymatic process employed by bees to turn pollen into honey. A low temperature vacuum evaporator is used to concentrate the sugar. Most agave syrup is made by cooking the Blue Weber variety of cactus; however this Raw gave is processed below 40o C. The only way in which it is refined is that excess moisture is removed from the juice of the plant to prevent fermentation. Unfiltered Agave syrup has a rich caramel flavour, a sweet earthy aroma and a thick luscious consistency.

How to Use

Raw Organic Agave syrup can be used as a sweetener in any dessert or savoury dish. Where quantities of sugar or sweetener are used in a recipe less agave syrup will be needed to achieve the same level of sweetness.

As a direct sugar replacement, use at least 25% less Agave Syrup than specified.

Agave syrup is great in beverages, salad dressings and sauces as it dissolves and blends so well. Delicious in porridge or chia pudding, baked goods and desserts.

Great in raw slices, sweets and muesli bars, or add Agave syrup to smoothies.
