Pinhead oats, also known as steel-cut oats (US), coarse oatmeal (UK), or Irish oatmeal are groats (the inner kernel with the inedible hull removed) of whole oats which have been chopped into two or three pieces. 
To shorten the cooking time, these pinhead oats can be soaked overnight in water with 1-2 tbsp. of lemon juice or cider vinegar. Drain before cooking in fresh water. Pinhead oats can be cooked for breakfast, added to baked goods, used in hearty soups, or served in place of rice.
