Spiced Moroccan Mint, Cucumber & Lavender Spritz

A refresh spritz for a hot summers day! This invigorating mix of mint, cucumber and lavender will have you happily sipping all day long... ⠀

3 tbs Green Tea 🌱
2 tbs organic lavender flowers 🌱
1L boiling water
80g organic raw sugar 🌱
2 lemons, 1 juiced and 1 sliced
4 star anise 🌱
1L soda water
1 cucumber, sliced
Handful of fresh mint leaves
Ice cubes


  1. Combine the tea, lavender and boiling water in a jug and leave to stand for 5-10 minutes. Meanwhile, toast the star anise in a hot frying pan, 2-3 minutes until fragrant. Strain the tea and add the star anise, sugar and lemon juice then stir to dissolve sugar.
  2. Allow to cool and place in the fridge until cold.
  3. To serve, place cucumber, lemon slices, mint leaves and ice cubes in jug or glasses. Half fill with the iced tea and top up with the soda water. Serve.
