Spiced Moroccan Mint, Cucumber & Lavender Spritz

A refresh spritz for a hot summers day! This invigorating mix of mint, cucumber and lavender will have you happily sipping all day long... ⠀

3 tbs Green Tea 🌱
2 tbs organic lavender flowers 🌱
1L boiling water
80g organic raw sugar 🌱
2 lemons, 1 juiced and 1 sliced
4 star anise 🌱
1L soda water
1 cucumber, sliced
Handful of fresh mint leaves
- Combine the tea, lavender and boiling water in a jug and leave to stand for 5-10 minutes. Meanwhile, toast the star anise in a hot frying pan, 2-3 minutes until fragrant. Strain the tea and add the star anise, sugar and lemon juice then stir to dissolve sugar.
- Allow to cool and place in the fridge until cold.
- To serve, place cucumber, lemon slices, mint leaves and ice cubes in jug or glasses. Half fill with the iced tea and top up with the soda water. Serve.
